If you have eggplant at home, prepare this delicious and healthy for dinner|Roasted Eggplant

Ingredients:

2 big eggplant
1 tsp turmeric
1 tsp corriander
1 tsp chilli powder
1/tsp cayenne pepper
1/2 tsp cumin
3 tomatoes
1/2 yellow onion
4 cloves garlic
1 tsp ginger
5 tbsp olive oil
1tsp garam masala
salt and pepper to taste
fresh cilantro for garnishing

INSTRUCTIONS: 


Wash the eggplant and pat dry. Then make few slits all over the eggplant with a knife. In 3 of those slits, insert a large clove of garlic. Drizzle with olive oil and Put the eggplant directly on heat and roast, turning often for around 10-12 minutes until completely roasted.

Once roasted ,wrap in an aluminium foil to cool.

Once cooled, scoop the meat. Transfer the roasted eggplant to a bowl and mash using a fork or chop
Heat oil in a pan on medium heat. Once the oil is hot, add chopped garlic, ginger and onion

Add the chopped tomatoes and mix. Cook the tomatoes for around 5 minutes until very soft.

Add the mashed roasted eggplant into the pan and all the spices.Stir in the chopped cilantro
