I love food and I love you all too Jesus has blessed me with the ability to cook. I thank him so much for everything he has blessed me with. I pray my recipes can help yall also and remember I have some hit and misses with my recipes. Honestly we all have hit and misses we human and Jesus still loves us so Aye.

1 large carrot or 20 small baby carrots
1 Half of Large onion
4 Jalapeños cut in half
1 tbsp of cummin
1 tbsp of Chicken bouillon
2 tsp of Mexican oregano
1tsp of pepper
1 tbsp of salt
1 1/2 table spoon of sugar
2 tbsp of coriander
5 Guajillo Chilies
10 Dried red chili peppers
2 cap fulls of vinegar
1 clove of Garlic
2 things of short ribs

Prep and Instructions: Bring water and 2 cap fulls of vinegar to a boil in large pot. Boil 20 minutes. Once meat has boiled for 20 minutes pour water out and rinse it off. Afterwards trim as much fat as possible off the meat ; also while trimming the fat off its okay to do it under cold running water its not seasoned so it does nothing to the meat and it protects your hands from the heat afterwards place back into a large pot or until the water covers the top of the meat.

Once you have done that start adding all your spices and seasonings. Remember to clean out as many seeds from the Guajillo chilies and Jalapeños as possible.

Remember to tie coriander in Cheese cloth before adding it to the pot. Its safe to boil the cheese cloth with the coriander in it. I promise it won't hurt.

Once you have boiled the food with THE LID ON for an hour and 30 minutes remove all the vegetables, the cheese cloth with the coriander in it, and the clove of garlic. Do this using a strainer or a large cooking spoon. Once you have taken everything out the pot take a cup full of that broth and set it aside.

Afterwards blend all the vegetables add some broth ONLY IF NEEDED and throw away the cheese cloth with the coriander in it you no longer need it. Once that's done try and chop your meat up as much as possible.

After you have chopped your meats and blended your vegetables make sure to add it all back in the pot and cover with lid and let it cook for another hour or 45 minutes on medium heat or a simmer.

Add water if it starts to stick a little and taste to see if you need to add more salt. ADJUST FLAVOR TO YOUR LIKING YOU DON'T HAVE TO FOLLOW THIS WHOLE RECIPE.

Once its done cooking to YOUR LIKING add some non stick spray to a pan with some Mozzarella
dip tortilla in Birria meat mix add to the pan with mozzarella and throw some more cheese on top along with your Birria meat mix. Let cheese melt on bottom of pan then fold tortilla over on top of the Birria meat mix. Let cook 2 minutes on first side then flip and let cook on other side another 2 minutes.

Afterwards take that cup of Broth add some raw onions and cilantro if you like and dip your Birria taco in and enjoy.
